Sarasota and the surrounding area has incredible culinary
resources in the many talented chefs here. They rank along with
the many artists that call the area home. Next month I will make
it a point to share some of those chefs with you.

Spinach Me Blue and Feta Penne
1 -16 ounce package penne pasta
2 tablespoons olive oil
2 tablespoons truffle oil
6 cups peeled and chopped fresh plum tomatoes
2 - 10 ounce package fresh baby spinach,cleaned and stemed
2 clove garlic, minced
1- 16 ounce package feta cheese or use 8oz of each of blue and
feta
fresh ground black pepper to taste
Cook pasta according to directions. Drain, and set aside.
Heat both oils in a large pot.
Add tomatoes, spinach, and garlic; cook stirring for 2 minutes,
or until mixture is thoroughly heated and spinach is wilted
Add pasta and cheese, cook 1 min.
Season to taste with pepper.
Makes 8-12 servings.
